Bread is the most universal and versatile of foods. Hailed throughout
history as a secular mainstay and a sacred symbol, this fundamental
fare appears in as many forms as there are cultures around the
world. Bread has almost always been a part of the human diet,
but over the centuries the world's bakers have made many improvements
and variations. In fact, today's breads scarcely resemble the
earliest versions of the food.
