JJ: Time, time and more time. We’ve stayed true to the trade, and have kept the desire to succeed in an industry that can offer so much fun, and so many headaches. I’ve realized that one can not make do without a great and dedicated staff. In other words, all of us deserve to be recognized for the success of the restaurant. I just maintain the privilege of signing checks.
