Jan Jorgenson RR: Describe the evolution of Two Chefs from a cooking school concept with two partners to a landmark restaurant run by just you?

JJ: Time, time and more time. We’ve stayed true to the trade, and have kept the desire to succeed in an industry that can offer so much fun, and so many headaches. I’ve realized that one can not make do without a great and dedicated staff. In other words, all of us deserve to be recognized for the success of the restaurant. I just maintain the privilege of signing checks.
